Our last week of salad

This week is my family’s last week of having salad, Don’t enjoy eating cold food on colder days.. any ideas for delicious, fairly simple Autumnal dishes incorporating lots of veg, plus ideas for the slow cooker too?

Lots of soups
Stews, chicken, onion, carrot, beef, barley, red wine
Roasted veggies

Stir fries. Lots of shredded veg plus meat or fish if you want, with rice or noodles, and some Thai, Chinese or Japanese sauces or flavourings.

Cawl is essentially the national dish of Wales and is the perfect meal when the weather is cold and wet (most of the time in Wales, then...)

I've moved from salads to stir fries, warm roast veg and grain salads, and curries.

I’m also winding down the salads and have moved onto fish pie , cottage pie , casseroles , pasta bakes and curry’s .

Nice chunky soups with barley.

Warm winter salads like sweet potato, lentils, crispy bacon and spinach.

Tray bakes are v easy. Chicken/pork/ or something like squash/sweet potato, lots of root veg or peppers/mushrooms add a handful of baby tomatoes for a bit of cooking liquid. Glug of olive oil and seasonings.
Fish stew, with peppers/tomatoes, potatoes and chilli. Doesn't take long to cook either.
Pot roast beef or pork v good in slow cooker

I’ve made a pasta bake for tonight with courgettes, broccoli, tomatoes, peppers, and mushrooms. Plus lots of cheese.

Agree with pp re traybakes - I do a sausage one, and a chicken and chorizo one. Chickpea curry. Chilli and bolognese with loads of veg in them are great for freezing too.

Long time veggie. Slow cooker is a bit meh for a lot of vege food. Certainly can’t leave it all day like meat stuff as veg just becomes watery soup. Anything with lentils in is a bit chalky - they need to boil.

Slow cooked tomato sauce for pasta though, mmmmm, yes please.
