Pickled beetroot

Now I love fresh beetroot, I want to get some jars of pickled because of the long self life.

The problem is, i loathe cold meat, sandwiches and salads 🤢

So what the heck could I do with them if I bought them?!
All the recipes I can find state sandwiches and salad and cold meat....

Can I just give them a quick rinse and roast them like I would fresh or will that taste awful..?

I eat the vacuum packed as a regular side with whatever I'm eating. Hot or cold still tastes good.

Pickled beetroot is fabulous, but if you (inevitably) eat too much, it's important to remember the next day, before you start panicking about having some deadly urinary disease. Grin

No that would be awful. I like pickled beetroot with things like shepherd's pie or beef stew. Give it a try, sounds odd but it's great.
There's nothing odd about pickled beetroot with shepherds pie. I also like it sliced up on top of a mature cheddar and crackers.

Add to couscous or another grain or rice or cauliflower rice or whatever is your favourite and add falafel or some type of meat or roasted veg.
Add to baked potatoes with cheese if I’m honest I normally have a salad next to a baked potato.
Eat straight from the jar with fork Grin
Stick some on a sandwich or a roll but as long as you are going to eat it as soon as you have made it as the bread/roll will be soggy if you leave it for a while.
Make a salad (I know you said you didn’t like salad) but then put it in a wrap and add falafel or chicken etc drizzle favourite sauce wrap and devour.
Add it to egg dishes but I hate egg so no advice!

It won’t work- I love pickled beetroot, but they taste of vinegar. You can’t use them the way you’d use fresh.

Just buy fresh I’m afraid.

Also great with beef stew, Lancashire hotpot.

Stew and corned beef hash are great with pickled beetroot, though I prefer pickled red cabbage!

With smoked mackerel and horseradish.
Or, cottage cheese and corn cakes
Or feta cheese and avocado
I love pickled beetroot!

It's so good with fish and chips, stovies or corned beef hash.

Myfavourite is in a fish finger sandwich.

I am not a fan of pickled beetroot . I tend to buy peeled vacuum packed beetroot and chop it up with a mix of sour cream horseradish herbs with salad.

There is a small family business who do beetroot crisps nearby. The crisps are divine. I buy them as gifts for family and friends now. I am on a diet but want to support them. They are my bank holiday treat.

Fresh beetroot seems to be hard to get here.

I love pickled beets right out of the jar. But I had a really good salad with them, mixed baby greens, beets, walnuts, blueberries, strawberries, and goat cheese.
