To ask for your best/favourite carrot cake recipes?

My lovely friend has asked me to make her a carrot cake, I used to have a lovely recipe, but for her the life of me I now can't find it! It was very simple, no extra fruit, or fruit juices, just a lovely simple but very tasty, moist carrot cake. All of the ones I've found/tried recently have either loads of extra fruit (pineapple, raisins, sultanas etc) or fruit juice (pineapple juice, orange juice etc) & I don't think any of them taste right, or they're too wet & claggy, or just a bit bluegh!

So wonderful people of mumsnet, please, hit me up with your favourite tried & tested carrot cake recipes.

Hummingbird bakery one every time. Works as a big cake or cupcakes, and i've even baked it into a pyrex bowl to make a domed shaped cake. Personally i omit the walnuts because i think they're the spawn of the devil www.cakebakerecipes.com/carrot-cake-by-the-hummingbird-bakery/

This is my one.

Ingredients:
255g plain flour
3/4tsp salt
1and 1/2tsp bicarb
255g grated carrot
75g desicated coconut
50g chopped pecans or walnuts
4 beaten eggs
2tsp cinnamon
340g caster sugar
200ml oil

Icing ingredients:
225g cream cheese or philadelphia
85g butter
2tsp orange zest
1tsp vanilla essence
560g icing sugar

Recipe:
Preheat oven to 180C.
Mix dry ingredients and set aside.
Mix carrot, coconut and nuts in another bowl and set aside.
Put the eggs, sugar and oil in a third bowl and combine with a whisk or blender.
In a large bowl, mix the dry mixture into the egg mixture, then add in the carrot mixture until it's all smooth.
Transfer to 2 cake tins and bake for 40 minutes .
Cool, then remove.

Icing recipe:
Beat the cream cheese and butter at room temperature until smooth.
Add the orange zest and vanilla.
Sift in the sugar and combine until smooth. Add more sugar if the icing seems too runny.
Chill for an hour, then spread on both layers of cake once cooled and build as a two-layer cake.

It's bloody good, though I say so myself.

Nigella has a nice one in the book called At My Table. Now I mention it, I think I'll bake it next weekend.

I'm not usually a fan of his recipes but Jamie Oliver's carrot cake is my go to now, one of the lightest I've tasted

It's this one but I don't put the lime in the marscapone icing or just make a more traditional cream cheese frosting
