Lasagne help pls

Looking for a food topic to post on and couldn't find it

I have an emergency lasagne question. I have a gas oven, and every single time I make lasagne the cheese doesn't melt nicely and brown. Instead you can see the shredded cheese individually and oil on top, I guess thts the fat released from the cheese.

I've tried covering with foil and then uncover towards the end of cooking.

Cooked without the foil. And still the same result!

I don't have this issue when I make it at my moms in her electric oven.

I preheat the oven, I don't open the door whilst it's cooking

Any one help me out please? Got a lasagne that needs to go in the oven in a little while

My Italian MIL lasagna was amazing.

Smear Olive oil on the base of your oven dish
Layer up with,
Sheet lasagna, zugo, meat sauce, béchamel sauce, Parmesan/mozzarella
Top with béchamel Parmesan/mozzarella

Delish, cheddar cheese nope.

I mix cheese in with the white sauce but don't put any on the top

Probably too late now but next time use torn pieces of mozzarella for the topping. It'll melt much better and the flavour is more suited to lasagne. Cheddar is the wrong type of cheese entirely.

Cover with foil so it heats and melts.. Take off foil for last 15 mins. Grate cheddar as fine as possible.

I make it Italian style with only parmasan on top , or sometimes no cheese

You don't actually need any cheese on lasagna but if you must, parmesan. Cheddar is too oily.

I usually reduce temperature, add extra cheese and cook for longer at the end, then I get fed up and give it a quick blast on high 😊 or stick under grill till brown. It tastes good either way 😁

When I make lasagne, I don't use bechamel. I layer with homemade cheese sauce. cheese sauce on top and then more grated cheese.

Never have a problem with cheese not melting and never have any left over either

Mmmmm cheese...

Personal choice obviously

Is it your oven setting? It matters where it’s blasting the heat from.

Maybe you’re not using enough cheese, you need a good covering of it

An hour in the oven at 180 degrees works for me. I put it lower down (middle shelf).

Cheese sauce and bechamel are completely different sauces

They both use a roux, but bechamel has no cheese. See Delias recipe here
