Perhaps the manufacturers having a huge laugh at our expense? Or conspiring with knife/scissor companies?

I have never, ever, EVER successful opened a packet which has had a plastic tab on without resorting to getting all chainsaw massacre on it with kitchen utensils.

Meat packaging seems to be the main culprit (perhaps packaging manufacturers are all vegan?)

Ironically the best photo I can find to illustrate my point is a successfully opened pack of bacon.

Also, yogurt pots seem to be designed to vomit themselves all over you upon opening.

Why are simple, every day tasks so infuriatingly difficult?

I'm sure there are other examples (feel free to share).

AIBU to think that the packets are out to get me?

There’s worse, OP. There are the ones that cut your thumb open when you start trying to get into them.. Then there are the ‘resealable for your convenience’ ones that give you a wide open grin from the fridge shelf next time you open the door.

@makingmammaries ooof, you've reminded me of the painkiller packets that cut your fingers when you try to pop a pill out !
