I’m a crap cook but I want to be vegetarian. I’ve tried many times but always go back to meat because I run out of veggie ideas within a week.
This is important to me, I feel I have to succeed this time!
Any ideas welcome!

I’m trying to do at least 2/3 veggie meals a week.

A made a caramelised onion crustless quiche this week which was lovely. Would be nice cold for lunch too.

I also make vegetarian chilli or falafel/chickpea burgers or vegetarian fajitas. All delicious and filling.

made cauliflower cakes to have with salad.
cook cauliflower, leave to cool
fry onions, (i used white , red, spring)
add spoonfll flour and blitz in liquidiser etc
form into rounds and fry when ready to eat.
think garlic was in original recipe but I don't like it
although we not vegie we both enjoyed them

Veggie chilli is super easy. Also handful of cherry tomatoes, half again of black olives, clove of garlic, good splash of balsamic and another of olive oil all in an oven-proof dish. Put in oven for 30 mins and serve with pasta. Is yum.

As is feta and lemon pasta
Cauliflower brocolli cheese
Quesadillas
Halloumi with anything tbh
Goats cheese burgers

Roast a punnet of cherry toms with thyme, olive oil, salt and pepper. Toss with hot pasta, toasted pine nuts, fresh basil. This is vegan but you can add cheese as well to keep it veggie.

Pasta alla Norma is vegan if you leave the ricotta salata out, or vegetarian with the cheese

I make a tomato stew with butter beans and top it with avocado, crushed up tortilla chips, feta cheese and fresh coriander.

Warm noodles with peanut sauce, tofu, broccoli and spring onions

I also use a lot of meat substitutes, like soya mince (ocado one is not bad), quorn southern style burgers, quorn nuggets and quorn pies.

Pasta Primavera is quick and easy. Your favourite pasta shape or spaghetti, while it's cooking quickly cook a selection of green vegetables, eg peas, chopped green beans, asparagus, Romanesque cauliflower florets etc etc . To serve, stir the vegetables into the pasta, you can add cheese if you like.

One of my favourites. Bit of prep to griddle the veg but so worth the flavour. I make loads and freeze portions. I've never bothered with the jacket spuds on the side, just drizzle the yoghurt and grated cheese straight on. Garlic bread works well as a side if you do want to bulk it out and can't be faffed with the jacket spuds.

(Chorizo also works well in it, if you want to make it non-veg)

Look at the BBC good food website and type in vegetarian family meals. Lots of good ideas.

I struggle a bit because half my household are veggie and the other half carnivorous Hmm

Thanks for all these great suggestions, I’m preparing an Asda order as we speak! Even better that DH is on board with it this time, should make it so much easier not having to disguise god awful quorn as meat!

I use Rose Elliot's books. They are from the 80s/90s so quite simple and not hundreds of crazy ingredients to find.

Chickpea curry.

So ridiculously easy. A jar of chickpeas, tin of coconut milk. Curry spices.

Cook, rice to serve.

You can add in a tin of chopped tomatoes if you want.
