Mine is baked beans on a giant crumpet. I put a knob if butter, squeeze of honey & some chilli flakes in the beans just to jazz it up abit.

What are your go to meals/recipes when you don't have time to cook from scratch?

Beans on toast.

Egg and smoked salmon on toast.

Egg and avo on toast.

if I am on my own... Everdine meals. Amazing tasty fresh healthy frozen meals.

Stir fry from packets and packet stir fry sauce so no chopping.

Fresh tortellini or gnocci with tomato sauce or pesto + rocket or other salad

Not fresh pasta... but dried pasta + frozen broad beans + frozen peas cooked with the pasta + pesto

Tom Yum noodle soup - chop and fry onion and mushrooms and the stem of pack choi, add tom yum sauce and boiling water.
Give it a bubble and add ready to wok rice noodles + already cooked chicken or defrosted prawns + the green bit of pack choi to warm through.
Serve in bowls with beansprouts and a squeeze of lime (and coriander, and mint, and thai basil)
Lots of ingredients but v quick and easy.

Ramen from the maggi packets... but add some vegetables and real chicken or an egg

Quick tagine
Chop a couple ready roasted jarred red peppers and add to a tin of tomatoes with tagine spices + chickpeas. Serve over couscous with plenty of fresh coriander.

Sushi bowl
microwave rice + frozen edamame beans heated in microwave + cucumber sliced and dressed with white wine vinegar + diced avo + smoked salmon

Tuna
Microwave rice. Wilt a bag of spinach in the microwave. Make a quick tomato salad. Fry tuna steaks.

When I am cooking anything like a curry, stew, tagine I always cook extra and freeze so on busy nights I just pull out a bag and heat up + cook starch
