AIBU to pick your collective brains?

My close friend turns 40 very shortly and I haven't a scooby-do what to buy for her birthday. She:

• Is single, no kids, very good income.
• Already has most things she might wish for.
• Is a bit of a fitness freak, very into tenis.

I'm thinking perhaps an outdoorsy activity of some kind or a travel item if I can think of something she doesn't have; but any suggestion is welcome.

How long have you known her? I think something she can't buy for herself might be nice - like a photo book of all your times together, or arrange a special get together of people you haven't seen for ages. Something like that.
