AIBU to ask you for meals for one ideas?

Want to do a food shop Friday to last until the following Friday. Need ideas for cheap, filling main meals for myself. Lunch is usually sarnies or eggs/beans on toast, so I would like some inspiration for interesting main evening meals for one. I do sometimes make stews to eat and freeze. I eat meat but enjoy veggie dishes too.
I am so over salads after Summer!

Salmon baked in a parcel served with a mix of green vegetables.

Mini pork roasting joint, served with cauliflower au gratin. Left over pork for sandwiches.

Steak with mushrooms and peas or green beans, or make stroganoff with the steak.

Chicken breast stir fry with noodles.

Pack of sausages can be used over a couple of nights - sausage casserole, sausage and onion baguettes, sausage and mash.

Same with chorizo - chorizo and bean stew, chorizo pasta

I'd probably buy a pack of chicken breasts, pack of bacon or chorizo and a pack of bacon or sausages then make them last through several different meals.

Wow! thanks, some great ideas already! Grin chicken is so versatile, and I'd forgotten about chorizo as a tasty dish with beans.

I love leftover spag bol with a jacket - also leftover curry. Can't beat jackets for using up leftovers. A giant bag of spuds going on my list!

Practically anything you do for more than one! All you need to do is to freeze the extra into portions which basically means you have a lot less cooking to do, as it is already in the freezer ready to heat up. When I was a student living in a shared house with no option to do that I just bought smaller quantities of meat by going to the butcher or the butchery counter, i.e. 2 sausages, 4 rashers of bacon, a small amount of liver etc. But if you have a freezer it is easy to store the extra.

Frozen is your friend. I buy bags of frozen chicken (either breast or pieces) because you can portion it easily for things like hunters chicken. Same with frozen veg, you can take out exactly what you need.

I have a small slow cooker and do things like stew. You can also cook something like chilli and use it over a couple of days.

Also frozen mash, it's fab for a cheat jacket spud, especially if you're using leftovers with it.

Oh yes liver! I do like it and it's cheap. A few mushrooms and some smoked streaky bacon and veg - a tasty dinner!

I have a good local butcher with a selection of homemade sausages, so I can buy a couple of several different kinds and freeze. Mmmmm toad in the hole......
