Made a carrot cake for DH’s birthday- realised after it was mixed that I’ve lost the right sized cake tin (how does one lose a cake tin? I have no idea) so have split the mix and am baking it in two smaller ones instead. What do I do about cooking time?!

It was supposed to take 40-50 minutes in a 23cm square tin. It is now in two ?20cm round ones instead. On at original temperature. Help! I put it in before I thought of this!!!

Most sandwich cakes take 20- 25 minutes

Pop a skewer in the middle. If it comes out clean it's done.

I'd turn it down a smidgen and check it at 25 minutes with a skewer.

It is going to be a bit of guesswork but should be OK to check it, I'd say after about 25 - 30 min initially if it looks ready

Turn it down a touch. Check after 20 mins.

Take a cake out and listen to it - if it’s crackling it’s still raw inside. If you can hear a few crackles it will be moist but cooked (more like a brownie). No crackle cooked more like a dry sponge.

For carrot cake you’re likely going for the middle option.

I was about to post what the others have already said. In addition, if you have a smallish stockpot or other saucepan with handles, they can make excellent cake tins.

No probe thermometer sadly. Will have to invest. And thank you everyone else. Have turned it down and will investigate shortly.

Carrot cake is quite robust, you have some leeway there

Robust is good. I need things I can’t fuck up.

Though this is gluten free and dairy free so god knows if it’ll actually taste of anything.

I was going to suggest what others have - lower temperature and 25ish minutes in the oven. Good luck, I hope it tastes nice. Have you got something to sandwich it together with? I was going to suggest cream cheese icing but I see it's dairy free.

And yes I have dairy-free vanilla buttercream to sandwich it with. Which is nicer than it sounds! Cake Cake Cake
