To ask for diet/healthy eating hacks?

I have 4 stone to lose. I'm 45, pre-menopausal and I've been yo-yo dieting for 20 years. DH and I veer from living on baked chicken, broccoli and rice, to making rich pasta dishes with meatballs, to mindlessly knocking up cheese on toast. We aren't very organised.

I don't eat eggs or fish, and I have IBS so need to go easy on fibre which kicks it off (wholegrain, pulses, veg, some fruit). DH needs plenty of carbs as he works a strenuous manual job, I'm sedentary but stuck in the car or on trains a lot (hence trying not to aggravate the IBS). No DC to worry about, just me and DH, but the household can still be chaotic.

What are your hacks for food prepping and batch cooking? What are some good "one pot" recipes which are safe to freeze and re-heat (germ-phobe)? Please can I have your tips and ideas! Everyone seems to be talking about food prepping every week but I don't really know where to start and from what I've researched, everything seems very much egg-based.

All can be cooked as 4/6 portions, 2 for tea, 2/4 for the freezer. Your DH can have a large amount of rice/pasta/potatoes with it and you can have a smaller one.

A slow cooker might help you, as you can prep stuff and start it off in the morning then it's ready for tea?
