2 weeks in every 6 mine and my partners rotas conflict to the point that eating together becomes impossible.

Im a good cook but i really really lack motivation to cook just for me so often end up with just toast. Marmite on toast if im pushing the boat out..

I do meal prep and freeze occasionally when i have time, but what quick and fresh meals do you all enjoy for one?

In truth I probably wouldn't bother too much just for me. At most, jacket potato and cheese, quiche and salad, ham and french stick or a bacon and egg sandwich.

Pasta, pesto & grated cheese
Jacket potato, tuna & broccoli
Veg stir fry with noodles
Something out of the freezer like fish cake and chips

One pot macaroni cheese:

Boil 75g of macaroni
Once cooked, drain and return to the pan over a low heat. Melt 15g of butter to coat pasta, sprinkle 10-15g of flour (depending on how thick you like the sauce) and mix to coat buttery pasta. Add 100ml of Milk and stir till the sauce thickens. Stir in 50g of grated cheese and stir over the heat till it melt. Enjoy!

A baked potato. (DH doesn't like them). Particularly if you have small DCs - pop one in the oven before you start the evening routine, then when you're finally ready to sit down and eat it's waiting for you like a big potato cuddle.

Also partial to a super-spicy chickpea curry with a naan bread out of the freezer, and variations on macaroni cheese - another dish no-one else likes in my house.

Fry spring onions ginger peas and what ever veg I have lying around with some chicken. Add a micro bag of rice, a little chicken stock top with teriyaki sauce and pumpkin seeds. Yummy in less than 10 minutes.

Mushroom risotto made in the microwave , it’s my go to meal when I’m only cooking for me because nobody else likes risotto .

A huge bowl of soup noodles for me. My preferred would be Nissin Demae Ramen Sesame flavour, with a fried egg and some greens. And dumplings or grilled frankfurters if I've got them in Grin.

Slice Kabanos sausage maybe a few mushroom and fry put in a big bowl. Boil pasta and cook broccoli in the same water for last 6-7 mins pasta is cooking. Get a pack of sundried tomato in olive oil and chop a few tomatoes add to bowl. Throw together tomato pasta mushrooms sausage and broccoli in sundried tomato oil. Black pepper parmesan to serve.

Also similar mushrooms and sausage fried with some cherry tomatoes chopped. Add spinach til wilted.

Make an omelette in the stuffed style. Egg fried, sprinkle cheese until melted. Then add the spinach mushroom tomato sausage to warm. When the top of the egg is set then fold over as you slide on a plate. Eaten with toast.

I often have fish as it's quick and easy, sea bass fillets fried with a sprinkle of spring onion added at the end, salmon fillet wrapped in foil and baked for about 15 minutes, or cod fillet done the same way with a sliced tomato & some olives also in the parcel.
Another favourite is Salade Niçoise with tinned tuna, tomato, hard boiled egg, cooked green beans, lettuce, olives if you like them.

Soft boiled or poached egg, asparagus, toast.
Spaghetti served with olive oil, chilli flakes and garlic ( or lemon zest, black pepper and cream cheese).
Baked sweet potato with creamed spinach.
Crispy tofu with sesame seeds, spinach and soy sauce.

An entire garlic baguette ((which incidentally are never as nice as they used to be - recommendations gratefully received)) washed down by a tub of Hagen Dazs salted caramel ice cream and a cup of tea. Grin
