I have had an expected massive vets bill (thanks cat!) I can pay it monthly but still had to initially pay a chunk.
Skint this week now.
I found in my cupboard some rice, tin of chickpeas, red split lentils.
In fridge got a sweet potato and some spinach.
How can I make a curry out of that?
I have all spices etc in cupboard.
Something simple?
Thankyouuuuu

Spinach and chick pea curry (chana bhuna I think it’s called)

Sweet potato and spinach rosti

You can use the red split lentils to make Dahl.

I think there is a chickpea curry recipe on the Mumsnet recipe section.

Hope your cat is better soon!

You can def make a curry, particularly if you can get an onion. I would:

Peel, finely chop and then gently fry an onion in oil until nicely soft
Peel sweet potato and chop into chunks, add to onion and fry for a further 10 mins or so
Add spices, I would do garlic, ginger, paprika, garam Masala and turmeric but you could use a pre mixed curry powder or any mix of spices really. Add to pan and stir, cook for 2 mins more.

Add the chickpeas and/or lentils, and a tin of tomatos (if you have) and add water to cover the veg (just use water if no tomatos). Bring to book then reduce to a simmer and cook for about half an hour - 45 mins, until the sauce is reduced and the potato soft.

Add the spinach and cook for 5 mins more until wilted.

Serve with rice or naan bread.

It's nice also to add a time of coconut milk if you have one, to make it a bit creamer.

Oh thank you all very much.
I actually do have an old tin of coconut milk so I can do that.
