Just made the best and easiest cheese quesadillas.

Butter ( a lot) to coat the saucepan, bung in a couple of tortilla wraps, coat with artery-clogging butter, lavish with sliced Edam, turn over and fry whilst poking to ensure some of the lovely melty cheese is poking out.

Top with sour cream and eat whilst piping.

I dry fry them, no butter or oil! Nice and crispy. Grated cheddar and chopped up spring onions are a great filling.

OP. Did you think about brushing with extra butter for a lovely burnished effect or perhaps providing individual dipping trays of melted butter?!

Maybe freeze some butter so you can grate it on top next time, it sounds delicious but definitely needs more butter.

Butter is ridiculously expensive compared to even a year ago.

Anyway, no need, always dry fry a quesadilla.
