God, no, it's not corned beef hash!

I don't have quantities for you, as I do it by eye, but it's basically stewing steak chunks, onion, quartered potatoes and carrots. Season to taste, add water and beef stock, and then oven or hob cook for a couple of hours.

It's a casserole, basically. Brown the onions and meat first.

Serve with red pickled cabbage or beetroot.

You want the end result to look like this, more or less. Use lamb, if you prefer, but never chicken or pork.

Google Rita’s Posh Scouse on bbc. It’s the first layer of potatoes that give it the authentic scouse texture but you must give it the full time for the spuds to break down before you go to the next stage.
