...eat a chilli that he cooked on Weds? It is now Sunday evening. It has been in a tupperware in the fridge since he made it. I'm not touching it because I'm overly cautious about this stuff. Would you?

Yeah it should be fine! If it smells ok it will be fine. We all survived in the days before use by dates etc! If it had been left out uncovered then no, but covered and in the fridge then yes!

I'm sure I read somewhere that leftovers are only good for 48h so I wouldn't.

I'd eat it after anything up to a week. Just reheat to at least 75 degrees. Things that aren't reheated are a bigger risk (roast chicken etc) but even those should be fine for a few days.

3 days is really the latest I'd eat something I'd made, and preferably only 2.

I would but a lot of MNetters would have you think that even food made over 2 hours ago will send the entire household down with D&V if not eaten immediately.

I do this all the time. So long as it's heated thoroughly it should be fine.
