Cheesecake advice!

Help. I've never made a cheesecake before and just realised I've not ordered enough mascarpone. Only got 250g instead of 500g. Been into the village and can't get any. Am I ok to substitute for soft cheese? Here's the recipe I was attempting..

Hmmm, not sure, mascarpone has a firmer texture, I'd probably try it anyway.

I make mine with Philadelphia and whipped double cream. So long as it has a few hours in the fridge it'll be fine. And if it goes wrong just tell them it's deconstructed cheesecake.

i always make mine with soft cheese and put a little bit of icing sugar into the mix sets it

I always use a couple of tubs of cream cheese, any brand will do, and some cream.

Double cream whisked up with a tub of full fat cream cheese and some castor sugar. Add in some melted chocolate and some baileys.

Ginger biscuit base - crushed and mixed with butter. Push into base.

I topped with cake toppers and sprinkled dessicated coconut on top. Whole thing took about 30 mins.

It's in the fridge under armed guard from my lot!
