...amount of legal work that needs to be done if buying a property for cash? I'm thinking that all that needs doing is searches? But genuinely not sure. WIBU to buy on this basis?

Searches; contracts; fixtures and fitting forms; exchange; handover of funds etc

Tbh, the only thing that isn't done is dealing with mortgage paperwork
