Some people just like to be careful.

So what happens to all the food that has not been bought in the shops that day?

There is a criminal level of food waste. Sad
I remember reading a study a few years back that said the average British household throws out £1000 worth of food each year.
I'll try to dig it out.

I’m pretty carefree with best before dates, sometimes by years with dry goods.

Use by with meat etc I’ll use it past the date if it’s been stored well.

I use leftovers etc.

In the early days with dh I caught him throwing out veg as it had reached its date. Now he doesn’t.

But I know people who buy loads each week and seem to throw most of it away. It baffles me.
