Why is everything a "pop up" these days?!

Pop up shop, pop up bar, pop up sauna?? What does it even mean

Just means it's there on a temporary basis.

It means the "shop"/ establishment isn't committing to paying business rent. From their POV, it's testing the market. The enue owner gets some sort of money, instead of just empty shops.
