I have made a soup in my soup maker. It is lacking something !!! Please, please, please offer suggestions on how to make it tastier!!

It tastes okay, but not much depth of flavour.

It’s one of those ones where I have just chucked stuff from the fridge in, no real planning.

Ingredients are:
Courgette
Red pepper
Red onion
Butternut squash
Tomatoes
Rocket
Veg stock cube
Pinch of chilli powder
Paprika
Splash of red wine

Any suggestions?

A parsnip.

WaxyBean · 09/10/2017 20:23

Garlic, basil and salt. And a lug of olive oil or butter.

Leeks

BringOnTheScience · 09/10/2017 20:24

Garlic
Black pepper

Keepthebloodynoisedown · 09/10/2017 20:24

I'd up the amount of stock cubes as an easy way to add flavour.

Ginslinger · 09/10/2017 20:24

salt and pepper

FauxFox · 09/10/2017 20:25

Soy sauce, honey and Worcester sauce - you need to balance the salty/sweet/sour seasoning

RebornSlippy · 09/10/2017 20:25

Throw another stock cube in.

SaucyJack · 09/10/2017 20:25

Dave's Insanity Sauce.

Redredredrose · 09/10/2017 20:26

Tomato purée? Plus seasoning.

SparklingBollox · 09/10/2017 20:28

Oh I dunno, it sounds more like a vegeatable sauce for pasta than a soup ATM tbh. I think that might just be me being a bit weird though as I have had loads of soups that taste like a sauce to me.
I find sun dried tomato paste really adds some depth to tomato based dishes or maybe some anchovies or Worcester sauce

LimpidPools · 09/10/2017 20:29

It almost certainly just needs more salt (which is why a stock cube would help).

You could also dry fry some ground cumin and add that. Delicious savoury flavour.

iamyourequal · 09/10/2017 20:30

Garlic, black pepper a little butter or olive oil and a chicken stock cube. Perhaps some rice or pasta to give substance. Also I wouldn't be putting red wine in that soup.

sunnydayzzzzz · 09/10/2017 20:30

Chicken stock cube, salt and loads black pepper

sunnydayzzzzz · 09/10/2017 20:31

Cubed potatoes

RJnomore1 · 09/10/2017 20:31

Feta.

Dreamstosell · 09/10/2017 20:31

Another stock cube and some butter

VivienneWestwoodsKnickers · 09/10/2017 20:32

Salt and pepper. More stock cubes.

greatminds · 09/10/2017 20:33

I have already made the soup so can’t take the red wine (or anything else) out.

Thank you, some great suggestions. Going to see what’s in the cupboards.

Cumin, another stock cube, salt and pepper and tomato purée I definitely have.

I do also have soy sauce and olive oil.

By the way - it is a browny colour Grin

fairyofallthings · 09/10/2017 20:37

cumin would go well with the butternut squash, as would ginger or turmeric.

ShiningWhit · 09/10/2017 20:39

Squirt of marmite and huge spoon of pesto. Fixes most blah soups.

user1489434024 · 09/10/2017 20:40

I'd chuck in some beans and pasta and go for a minestrone sort of thing!

MuseumOfCurry · 09/10/2017 20:41

Parmesan, some bacon fat if available, perhaps some pancetta.

Mum2OneTeen · 09/10/2017 20:42

Salt
