To think you can't reheat chicken soup

OK, genuinely unsure if I'm being OTT here or if this is reasonable.

When you cook chicken, provided you cool it swiftly etc you can reheat it once but shouldn't reheat it again, or so I have been told.

Yesterday I did a roast chicken and today made soup from all the leftovers. Was going to give the soup to DC for their dinner but then realised I would need to cool it and reheat it which would be that magical 2nd reheating which could cause food poisoning. So I have put in some extra liquid and put it in the oven at 150 and plan to leave it there for the next 3 hours and give DC an early dinner. Then I guess I will throw it away or leave it in the oven for another 4 hours for DH....?

My DM thinks I'm crazy and says I can just cool it and put it in the fridge and then reheat later. So, AIBU to think that could be dangerous?

Take some out for your husband rather than reheating and reheating. You're safe to give it to the children though, but make sure it's reached boiling point.

Well, I'd probably have portioned it out so the whole thing isn't being reheated more than once.

I would think though if you heat it thoroughly it'll be fine.

As long as you had boiled the arse off it (as dh puts it!) it should be fine to serve up again

Food only needs to be kept at 65ºC to be safe. No need to keep it at 150ºC for 3 hours.

Otherwise, just bring the soup to boil and let it boil for a few minutes. Then turn the hob off without removing the lid, then heat it up again when you need to.

It should be fine.

the second reheating will not CAUSE FOOD POISONING...do try and get a grip on some simple food hygiene rules

Home made soup from properly cooked and cooled chicken will be fine to give to anyone. Reheat what you need and freeze/fridge the rest.

I wouldn't keep reheating the whole thing and doling it out as that's just going to end up with the dregs of it being boiled to death, but there's no magic food poison switch as soon as you dare to go in for a second spoonful.

The problem when re-heating is when you just heat it to warm, then cool it down, then heat it up to warm.
A good boil in between should make it safe enough to reheat and eat.

I have been reheating soup several times for decades. Never heard of anyone get food poisoning from it.

People used to have a roast at the weekend, and make the leftovers last for several days, before the time of refrigerators.

Magic rules: 1. Don't keep food warm, ever. That's the perfect temp for germs to breed. So hot is hot, and cold is cold.

  1. Keep your hands, knives etc. clean.
  2. Don't allow uncooked meat to touch other foods that won't get cooked.

But your mother is right. Seafood is different, btw and can't be re-heated lots, and beef is really unlikely to give you food poisoning.

Just to be clear, my plan was to keep it piping hot rather than reheating and reheating it iyswim.

If it's safe, it would be easier to cool it down and take out potions for the DC and DH later and just reheat those but that would be the second time the chicken was reheated.

I think you are all saying that would be fine but just want to be clear. I know I can be quite pedantic about food hygiene so good to know if I'm being irrational!

Its perfectly simple, heat and cool it as many times as you want. Just dont keep it 'warm' for an extended period. And it certainly doesn't need to be boiled to death.

I don't agree with reheating and cooling over and over again. I'd cool and put in the fridge and then reheat portions as required so each portion is only reheated once

Thanks both. I definitely won't reheat it again and again. It is already made with chicken that has been reheated once so if I reheat any portion of the soup at all, it will be reheated a second time. I certainly wouldn't reheat it again if I did that. And I always cool quickly and make sure it's really really hot!

I am currently in the same predicament. Can you please let me know if you reheated the soup again and didn't get sick? Lol
