To ask for help to recreate my Nan's egg and bacon pie?

Unfortunately my DNan is long departed but she made the most fantastic egg, bacon and potato pie.

We are having a family picnic for a birthday and I'd love to recreate it, but does anyone have an actual recipe that resembles the following??? I'd be eternally grateful to anyone who helps me to recreate something like hers...

I remember...

Really thinly sliced potato
Short crust pastry
Bacon
Maybe peas and maybe onion?!?? Might be wrong...
Parsley
Layered and then she poured some sort of eggy concoction over the top and put a pastry lid on it and then baked it.

I feel like if I just make it up it might taste like crap or not even cook properly....anyone got a recipe like this? I've searched online but can't find anything...

Argh no! It's a potato pie with bacon in and then full of egg! I really don't want a soggy bottom...

It’s a New Zealand thing, they have great bacon and egg pies. Try a Nz google search.. good luck.

Heman, my mum used to make that, too. I remember making a quiche for the first time and being amazed that I had to whisk up the eggs!

Here's what I'd do with those ingredients for that outcome.....

Buy Jus-Roll savoury pastry for the crust

Thinly slice floury potatoes

Cook onion, (prob a bit of garlic too near the end) cut up bacon and peas (I would omit peas, but that's me) in some butter till bacon crispy and onion translucent. Let it cool.

Mix 2 eggs, a bit of milk, and salt and pepper in a separate bowl. A bit of white wine instead of milk would work too if you're feeling fancy.

Put pastry in pie pan and pre-cook that for about 5/8 mins to stop the rest making it too soggy.

1 Layer of potatoes flat in the bottom of the dish

Dust with a thin layer of flour and put a few dabs of butter
Pour on some of the egg mix
Sprinkle on the cooled onion bacon mix

Repeat potato layer, flour layer, egg layer, bacon/onion layer till your dish is full, with a layer of flour and butter on the top.

Put the Jus-rol lid on and vent it with a knife, flute the edges

Brush lid with milk or with egg wash

Bake for probably 45mins to an hour on a mid-hot temp (200 or so)

Just buy ready made pastry Wink. Actually Queen Delia has a very similar pie. She gives instructions for a large pie if you don't want to make small ones. www.deliaonline.com/recipes/type-of-dish/picnic-recipes/bacon-and-egg-pies. Although that might be easier for you if you aren't confident with pastry. You could use a ready rolled sheet.

I'll happily buy ready made pastry but if I'm putting raw potatoes in a pie I want to make sure they're cooked and that my recreation isn't absolutely god awful... none of these recipes have potato in...Sad

I'm sure that hairy bikers recipe would be fine with a layer of potato in. You could parboil the spuds first.

In my suggestion I said a 'but ' of milk or wine- actually you want it runnybrather than eggy thick so that it'll evaporate and cook the potato and then firm up with the flour. Wink

I miss egg and bacon pie now and just realised you can't buy it in the uk. Used to get big cold slabs of the stuff. Yum.
