to think of doing this with eggs?

Have just made some --bloodyfaffy- delicious beetroot and kale mini quiche but I have beaten egg left over (say 2). Lunch sorted as is pancake batter, aibu to pop it in a Tupperware and use for scrambled eggs tomorrow??

Are you being unreasonable to have scrambled eggs tomorrow? I don't get the question. Are you giving up eggs for Lent?

In the fridge until tomorrow. No problem.

Tip: beaten eggs freeze pretty well too. Always useful to know.

The eggs will be fine for 3 days and as maidOfStars said, they freeze well.

You're fairly unreasonable for making beetroot and kale mini quiche though.
