The toppings won't cook as well if you put the cheese on top, you would end up with horrid onions etc.

Mine is tomato sauce, toppings, cheese. It's very very good and I must assure you the toppings are not soggy ( I use capers, sun dried tomatoes, olives, mushrooms, sweetcorn etc)

Toppings need to be precooked. Then it's base, tom sauce, cheese. Obviously.

Any onions on pizza would be horrid, no matter how you layer them!

Sauce, cheese, toppings is traditional. And if you put too much on top its American rather than Italian Wink

Toppings don't need to be pre cooked. We put red onion, mushrooms, peppers, salami and Mozarella on ours. Lush.

you have to bear in mind that Pizza is just topped bread thing
so the New York version is the one that came back to the UK
but the Provence version is IMHO the best
and that pre 1600 they were all what Nice calls a "white pizza"

I do my dough in the breadmaker cheat then I roll it out roll Shock then it's passata with garlic, herbs & pepper on, a thin layer of cheese, toppings, then more cheese, garlic, herbs & black pepper. I like a drizzle of olive oil on & for a forristiere, I like an egg in the middle. Yum!
