Here in Oz, obviously it's summer and we have loads of chillies and garlic in the garden. Chillies in oil are yum.

  1. Roast chillies in oven. About 20 mins. Watch carefully- just want skin browning.
  2. Combine in saucepan 1 cup water, 3/4 cup of olive oil, 5 cups apple cider or white vinegar and pinch of salt. Bring to boil. Cover and simmer 5 mins.
3.Peel similar number of cloves of garlic to number of chillies. Or to taste- this bit non compulsory, but love the combo.
  1. Put chillies, garlic in a sterile airtight jar. I have always just put jars etc through a hot wash in the dishwasher and microwave 1 min. With no worries.
  2. Use both garlic and chillies in curries, pies stews etc. Mr Fox eats chillies whole, but he is odd! Enjoy.

Great chopped really, really fine in Mexican and lasagne (well, pasta generally) too! As you may pick up, pleased with my mornings work!

Is Apple cider the same thing there as it is in the uk though? I seem to remember Mrs mangle and Harold bishop getting pissed by mistake due to a misunderstanding around Apple cider

YABVU to gloat about the fact that you're midway though summer while we're stuck in a grey, rainy, sleety hell called 'January In The UK'.

I bet some hot surfer dude called Brody has just wafted past too.

Hey squoosh. Pretty lucky it's true! Where we are is quite an English climate actually. Four definite seasons and cold winters, although not by UK standards. Only snow is high up. Mild summers comparitively- about 25c now, although that's a cool summer day. No surfer dudes in sight, sadly!

Going back to the apple cider vinegar cow that laughs. i reckon it would have to be similar. Area known as Apple state, English varieties, so vinegar would have to be similar I would think. Assuming can keep sodding possums away from apples (Fox dog helps here! Her one job! )
