Here in Oz, obviously it's summer and we have loads of chillies and garlic in the garden. Chillies in oil are yum.
- Roast chillies in oven. About 20 mins. Watch carefully- just want skin browning.
- Combine in saucepan 1 cup water, 3/4 cup of olive oil, 5 cups apple cider or white vinegar and pinch of salt. Bring to boil. Cover and simmer 5 mins.
3.Peel similar number of cloves of garlic to number of chillies. Or to taste- this bit non compulsory, but love the combo.
- Put chillies, garlic in a sterile airtight jar. I have always just put jars etc through a hot wash in the dishwasher and microwave 1 min. With no worries.
- Use both garlic and chillies in curries, pies stews etc. Mr Fox eats chillies whole, but he is odd! Enjoy.
