Have been let down by so many people recently and someone who has put us off for two months whilst assuring us he could do the work has now cancelled at the last minute. I know first world problem and roof over my head but I am so frustrated that this has happened again.

I don't think there is anything I am missing, we haven't haggled over the price or demanded certain days or been rude or anything else I can think of.

Is it me or is this just what it's like???

Also should I text him back and tell him what I think of him?

I would hire someone else. I've had workers pull stunts like that and didn't tell them off but just said, we've found someone else, even if I haven't. And I have posted negative reviews where I can. What sort of work is it? There are lots if find a handyman/worker sites and I'm sure you can find someone else quickly unless it's very specialist.

Try and get someone that is recommended. Less chance of pulling these stunts

Very annoying I know, I had a lot of workmen in the house doing various work and found it really frustrating

Its happened for gardening plumbing and building.
