Layer of jelly, layer of custard, layer of whipped cream, bits on top.

No sponge. No sherry. No fruit.

Mine was - generous layer and wall of sponge completely pissed on trifle. Two large tins of fruit cocktail, with generous portions of blueberries - layered with homemade custard, orange jelly and then a layer of whipped cream with multicoloured stars.

(Popping candy can also be added if you want to see a maiden aunt whizz around the room)

Omitting fruit I can understand, but you have to have sponge fingers or slices of Swiss roll soaked in juice, sherry or jelly surely.

How else do you get the spoon squelch?

Not trifle. But trifle-ish

Lets be honest, noone really likes the sherry soaked sponge, or the tinned fruit (shuddering, remembering my gran's trifle!)

But you can't call it trifle.

I can't bear the sponge in trifle, it is wet cake! WET CAKE!!! The thought of it makes me shudder.

Ah, you see, Birds trifle is trifle to me (without the sponge, of course). Birds trifle is what I try and recreate when I make trifle.

Putting jelly in trifle is like putting jelly in tiramisu. Never, ever, ever. Custard, sponge or Swiss roll, cream and sherry. You can hold the fruit, unless it's a twee little strawberry to decorate the top.

Unless you're making a Black Forest trifle with brownies, morello cherries cream and kirsch.

My mum made great trifle in the seventies.
Sponge, sherry, red jelly, tinned strawberries, raspberries and cherries.
Thick custard and whipped cream.
All in a huge cut glass bowl.

After a "do" db and I would fight in the mornng to eat the remains for breakfast. Love the custard and cream all mixed up.
