help... camembert cheese crisis

posted here for quick response.... my camembert baked cheese has gone all lumpy is this cos its not cooked enough? or cooked too much? or is it just a bad bit of cheese? done for 30 mins gas 4 with oil garlic and white wine drizzled over it.

Was it straight out of the fridge? It will still taste good but just looks a bit odd.

Some just seem to, but I think they're less likely to do so if they don't go straight in from the fridge. It wont hurt you though!

hmmmm it did taste ok just very cottage cheese as greenyeyes said very disappointed. do you think it is anything to do with where you buy from? sainsbo's has always been ok (so far) but this was from Lidl, perhaps it was not ripe enough as their brie is never ripe either.

I always find that if the cheese isn't quite ripe enough then it does go a bit lumpy.

I sell cheese, and we sometimes get Brie that goes a bit odd in a line along the centre. From what I can work out, it only really happens in the winter and I think it's down to over chilling. I've eaten it, and it tastes ok, but even when warmed up it doesn't seem to return to normal. The outside gets soft and runny, but the odd middle bit stays odd and lumpy.
