Easy pancakes - no scales needed

Not really AIBU but one of the other threads mentioned ready made pancake mix.
Mix one full cup of plain flour (not self raising), pinch of salt, 1/3 cup of sugar (same cupsize as for the flour), 1 full cup (again same cup) with milk and 1 or 2 eggs (2 eggs gives richer pancakes). Mix all through with whisk. Heat a bit of sunflower oil (or other oil but not olive oil) in a frying pan on high setting. Once oil is hot add a ladle of the mix and turn hob down to medium heat. Once the top of the pancake starts drying (e.g. no longer running) turn the pancake and finish cooking on other side on medium to low heat. If you like you can add bacon rashers once you have put batter in the pan or cheese (but cheese best for last pancake as it makes the pan sticky). Very easy, very cheap and no scales needed, just use the same cup for all measuring.

I just do 1/2 pint of milk with one egg and 4 tablespoons of flour. No cups needed!

Ahh no olive oil that explains why mine went wrong used olive oil- note to self for next year. Thanks dikkertjedap

I taught the DC the mug of milk, mug of flour and 1 egg mix and they have been able to rustle up pancakes by themselves since. It's foolproof. You can add fruit, raisins etc to this.

Add another egg and you have a reliable yorkshire pud mix.

I do any measuring device you like and tge same, eggs, milk and plain flour.

I've never added sugar to my pancake batter. Actually not heard of anyone else doing this either.

I do 4 rounded tablespoons of flour. 1 egg. About 1/2 pint of milk - whisk it in until it's the consistency of cream. Jobsagoodn.

Sounds like the way I do mine SilentBoob.

Add oil to a frying pan and wait until smoking before adding a bare tablespoon of batter.

The top should bubble, not dry out before turning over to finish.

Adding sugar to the mix????? Sounds very odd to me but I guess there are lots of ways to make a pancake.

Basically though, you need very few ingredients for good ones. Three in fact.
