I've just put the marzipan on my cake. The marzipan packaging says not to ice the cake for 24+ hours. Do I now wrap the cake, keep it in a tin, or what?

You just leave it out, at least I do, I think its what you are supposed to do.

I would either put it in a tin. Or wrap it in greaseproof paper, and then put clingflim around that.

sitandnatter the rather fundamental nature of my question will tell you that I've never made one before. And never will again. DH took responsibility for feeding it. So it has cost the ingredients and a bottle of brandy.

The point of leaving it for 24 hours is to allow the marzipan to air and dry out. Don't cover it. When you ice it, if using fondant, brush the marzipan first with a little cooled boiled water to help it adhere.

grovel I have the perfect excuse none of my family will eat it, we all hate currants, raisins, sultanas etc. Vomits.

Good luck with it though.

I'll be poshing it up with a Tesco chocolate log, if I am feeling a little bit Delia, I'll whisk the cream. Grin

You just need to brush a bit of brandy over the marzipan to make the icing stick.

No, don't do that. The idea is to let the marzipan dry out so that the icing stays nice and white.
