Food intolerances & weaning...how to replace calcium, fat etc

I have several food intolerances and don't wish my 7mth daughter to inherit any of them (the worst one is dairy). We saw the dietician last week who advised me not to give her fish, wheat, eggs, dairy etc until certain ages but did not tell me how to ensure that my daughter has sufficient fat, calcium etc.

So my question is how do I replace the calcium and fat in particular and how much should she have?

The vegan society gives lots of information about vegetable sources of calcium and other nutrients.
