Help!! 1st birthday on Sat...need cake recipe that's egg, dairy, wheat & soya free

Theres some nice recipes here - substitute Doves Farm flour for the wheat and add some xanthum gum to reduce crumbling. The black forest cake looked great

this mix can be made with egg replacer. It says make with soya spread, but I have made gluten free cake mixes with veg oil instead of margarine before (not sure what the equivalent quantities would be). We've made the gluten-free chocolate brownies using a Glebe Farm mix before and they were lovely.

Waitrose sell the mix in their free-from range.

MMMnnn...those recipes do look delicious , unfortunately I can't find any choc that doesn't contain soya... The Jello cake is a good idea...hadn't thought of that...

Johnsons have a couple of gf/df/ef/sf chocolates.

Their website is really good for looking for multiple free froms as she labels it all so clearly with the full ingredients. Helen also only sells stuff that tastes nice too - which makes a change.

I've had the Glebe Farm mix (which Helen sells) as I was recently on holiday where a little girl was (amongst other things) gf/df/sf and I am gf, so the owner made chocolate cake for tea for us from the mix and it was lovely.

This is what I made for Zach's birthday, it was delicious, moist and springy - we are lucky and can have soya and wheat - I don't know how easily you can substitute the flour, but maybe use Doves Farm as others say. Easy to substitute the milk with oat/rice milk or even neocate/nutramigen if you use them.

Chocolate Fudge Cake

4oz (125g) sunflower margarine
½ pint (300ml) soya milk
2 tbsp of golden syrup
1 tsp bicarbonate of soda
8oz (250g) plain flour
2oz (50g) cocoa
8oz (250g) sugar

Melt margarine, syrup and soya milk, except 4 tablespoons, in a saucepan. Dissolve the bicarbonate of soda in remaining soya milk. Sieve all the dry ingredients into a mixing bowl. Add the wet ingredients and mix thoroughly.

Line an 8" (20cm) baking tin with greaseproof paper or baking parchment. Pour the mixture into the tin and bake in oven 180C / 350F / Gas 4 for ½ hour. Reduce to 160C / 300F / Gas 3 for 1¼ hours.

If you are using a recipe like heliotrope's that uses normal flour and replacing it with gluten-free flour, a tsp of xanthum gum really helps - it sort of makes the mixture more glutinous, which when the cake is baked makes it more springy. You should be able to find it with all the other baking products.
