Omelette recipe for food challenge

My daughter has been booked for a loosely cooked egg challenge at hospital, and I was asked to bring a 3 egg omelette.

Has anyone else done this? What’s the recipe? Should I add milk/toppings? How do you make it taste nice since it’ll be cold (even if I make it at 8am that day, the appointment is 9-3!)

when she had a baked egg challenge, I was given a recipe sheet, but not this time.

Would a frittatta be okay?? They are pretty robust and should travel easily. Also can be eaten cold

I'd just make a plain omelette with salt and pepper, let it cool otherwise it will cook itself beyond 'loose', fold it up into quarters and wrap it in foil or put in a lunch box.

But their process sounds ridiculous, having people travel with omelettes, there must be so many that arrive overcooked.

Couldn't they just get the hospital kitchen to make them or use a plug in hotplate in the clinic?

Another person thinking frittata here though it’s not loose strictly speaking. I add chopped peppers, onions and garlic to mine

Thank you all! I suspect they mean “loose” as opposed to “baked” - baked eggs is when you mix it with flour (and other ingredients!) and bake for minimum 20 min at 160c - like a cake. My daughter can tolerate baked eggs, so the next step is “loose” which is a well cooked egg but by itself. So a frittata may be the way to go, though I’m still worried about my 2 year old eating that. She’s not that fussy for a 2 year old - but she is a toddler! May have to resort to ketchup…
