GF Gingerbreadmen: 275g gf plain flour, 1.5 teaspoons ground pure ginger, half teaspoon bicarbonate of soda, 125g butter, 125g caster sugar, 2 tablespoons golden syrup melted.
Seive flour, ginger and bicarb in a bowl. Rub in butter.
Stir in sugar, then add syrup and mix to a dough (add a little water if too dry or more flour if to sticky)
Roll out between two sheets of greaseproof paper until 5mm thick. Cut out using a 10cm cutter.
Place on greased baking tray and bake in 170 degree/ 325 degree or gasmark 3 oven for 10 minutes.
Leave to cool slightly before transferring them to a wire rack.
Decorate!!
When I made these they were quite hard to move when in the raw state so you have to be quite careful that they don't fall apart. I don't suppose headless gingerbread men would be the same!!
