No meat, no grains, what to eat?

I'm now in my 40s and have followed many different eating styles over the years and am aware than many, many things disagree with me (but probably not genuine allergies). As a family we have a history of every auto immune disease going but unlike the rest of my family I've looked to food and lifestyle rather than drugs and am mainly managing.

Anyway, I know that all grains and most pulses cause me problems. I don't want to eat heavily processed foods. So I tend to eat meat, eggs, fish, cheese and a lot of veggies. I'd rather eat less, or no meat, but I don't want to replace it with highly processed veggie or vegan alternatives and can't imagine replacing it with yet more eggs and cheese.

Does anyone follow a similar diet? What do you eat and is it sustainable?

Google AIP diet, although that suggests avoiding dairy and eggs also, there will be food lists and even recipes available but it really is very restrictive.

If it’s just Grains you are avoiding you could look at paleo and just eat more fish in place of the meat heavy suggestions.
