What are you having for your (low fodmap) dinner tonight?

I just read through a "what are you having for dinner tonight" thread and am feeling a little hungry sorry for myself as I'm following a low fodmap diet and can't have any of the meal ideas on there! Otherwise it would have been a great inspiration.

I'm definitely in a dinner rut and with a toddler in tow don't have time for anything too complicated... there must be others like me out there??! Any family friendly low fodmap meal ideas to share?

Ooh I have some suggestions! I did the full low FODMAP diet a year or so ago, I still am a bit mindful of not going overboard with them but I don't follow it strictly any more.

I got quite into various tray bakes with chicken legs or thighs and whichever you fancy out of potatoes, peppers, cherry tomatoes, olives, anchovies and chillies. All of the above makes it extra tasty!

Alternatively you can do various stir fries with tofu. I used to like one with broccoli and spinach, ginger, tofu and sesame seeds, with sesame oil and soy sauce added at the end. Another nice one has green beans fried with tofu, then add pak choi and some coriander, cumin and chilli. Then add bean sprouts and soy sauce. It's nice with lots of lemon juice. Both are good with rice or rice noodles etc.
