Hi everyone, I've been vegetarian for years and my work means that I would really struggle to going back to eating meat or fish.
I was diagnosed as a coeliac 3 years ago and despite a GF diet my symptoms didn't resolve. I'm also B12 deficient so having injections. After lots of tests my consultant suspects okay have permanent lactose intolerance and I'm on an exclusion diet.
This means lots of processed foods (GF bread etc) are out unless I make them from scratch.
I'm constantly knackered, stomach upsets etc and have to work long hours so cooking from scratch is tough, and eating out or dinner with friends is pretty much impossible. I'm worried that I'm becoming a social pariah and that others see my health issues as 'faddy'.
I'm essentially looking at considering eating meat (something which would be incredibly difficult for me) or being a gluten-free dairy-free vegetarian which will be difficult for me and everyone else.
Any words of wisdom please?
