Coeliac friendly short haul holidays?

Hi, DD(7) diagnosed with coeliacs and dairy intolerant, we are looking for a self catering holiday in Europe, can anyone suggest a suitable destination? Thanks

With our coeliac DC we have been to Kefalonia and Sicily. It was far easier than I imagined. In the restaurants they cook everything from scratch. My DS2 loves chips and I often find in the UK that the he can't have them when out as the driers are used for other things as well, however in Kefalonia the are cooked in fresh olive oil in a pan so no worries about cross contamination. In Sicily gluten free pasta was on offer in the restaurants we went to.
There is an app you can get on your phone which translates what you can't eat and you can show this when eating out.
Breakfasts was the trickiest meal, I took some cereal and bread with me (if you contact your airline before you go they will allow you to take an extra bag of hand luggage with prescribed foods in it).
I've also heard Spain is good.

Southern Ireland is very coeliac friendly, and you can drive there and bring anything you need!
