Vegan Carrot Cake Recipe - yummy

Hi,

Tried this Doves Farm vegan carrot cake recipe last week and it turned out really well - DS really liked it!! It's wheat, dairy and egg free and really easy to make.

Gram flour is made from chickpeas...but I must admit that I didn't have any so just used gluten free flour (so 7oz gluten free rather than 6oz plus 1oz gram flour!)

Ok, have made the cake to the recipe. The 1st words out of my 5 yr olds mouth were "is it suppose to be that flat?"

It is pretty flat and looks/feels really oily. Is this right? I have yet to actually taste any, probably tastes nice! I'll don anything to get some veg into my 2 yr old

Hmm, let me think....re: being flat - did you put it in the right sized tin? If you put it in one too large then perhaps it spread too thinly across the bottom so came out flat? And about it being oily, mine was slightly oily on my fingers when I broke it up but not to the extent of it tasting oily (if you know what I mean).

I feel really bad now - perhaps I've just got bad taste buds !

...and just thought of something else - you didn't mix the measurements did you i.e. did some of it in grams and some in oz as that can make a difference?

Don't feel bad wicker! I may have put it in the wrong size tin, I have 2 and can't remember which is which! I may have got the measuement mixed up. Who knows. I will try again soon.
