Dairy, Nut and Chocolate Free cake

Does anyone have a recipe for cupcakes that doesn't contain dairy, nuts or chocolate?

All you need to do is substitute your usual butter/marg for a dairyfree version (we use stork in the gold foil, NOT in the tub), in a regular 4442 sponge mix. If you need to loosen the mix, use a milk substitute, we use oatly, or a few drops of water. You can make 'butter' icing using stork too, it doesn't taste quite as nice, but no-ones ever noticed!

As Anita said, just substitute the recipe with your usual dairy substitutes.

We use Stork butter (vegetable oil), or you can use sunflower spread, Pure spread or even sunflower oil in some recipes such as carrot cake or courgette cake.

If the recipe calls for milk, I use Alpro plus 1 as that's what DD2 drinks. If cream is required, I use Oatly cream.

And yes. Although Stork icing doesn't taste as nice as the real thing, it's not too bad. And definitely can't tell the difference if you've never had "proper" icing either.

No eggs aren't dairy. You can be allergic to milk and not eggs (as my DD is) or eggs and not milk (as my DB was).

its easier than it sounds (even when there's an egg allergy too). There are so many subsitutes readily available now.

If its not your child (and what I mean by that is you won't be used to it) the one thing you have to but extra thought to is cross contamination ie if you use an icing sugar make sure its an icing sugar that's never had a buttery spoon put in it etc

the no dairy thing is for a little girl who's just starting an exclusion diet for a skin condition to see if it improves it so will ask the mum about whether or not she can have eggs as she does has other allergies (things that don't usually go into cakes!) and she's not allowed chocolate (because of the milk content??!!) she's not allergic to nuts but my daughter is so of course I can't use those. For icing I was thinking of just using plain old icing sugar and water?

icing sugar with water will be fine, my nephew has a dairy allergy, and icing was made from icing sugar box that it turns out my mum had previously made icing from using butter. Newphew had a reaction.

Eggs aren't dairy, but you had better check. If she can't have dairy, then my favourite vegan cake recipe is on a blog called something like "we don't eat anything with faces"

Betty Crocker vanilla icing is dairy free.

Type in "best chocolate cake ever that happens to be vegan" to google and the one I use should come up. It is a milk, egg and but free chocolate cake which is lovely compared to other egg and dairy free cakes.

If she can eat egg then just make a normal cake with soya or oaf milk.

Some people think eggs are dairy so clarify it just in case. However eggs are not dairy

I should add that the recipe I refer to has a lovely chocolate glaze which I recommend. I have made it as a big birthday cake (double quantities) cup cakes and as a loaf cake. All pretty good
