Meal ideas for milk allergic 15 month old

Ds has recently been diagnosed with allergic colitis. Cows milk protiens causes awful ulcers in his colon (surgeon showed us the photos - I cried!). They tested him for coeliacs and I rang for the results yesterday. I was told he doesn't have coeliacs, but they've made us an urgent appointment to see the consultant. The results have thrown up something else, but I have no idea what, and am worried Sad

I digress. I'm struggling for meals to send to the childminders for him. He eats things like chicken sticks/fish fingers, etc, but I really want more variety for him, and ideally something I can batch cook and freeze. I have to eat at work - It's part of my job, so I don't cook that often at home. I've done things like chicken casseroles and dumpling, and sausage and pork stews, but am running out of ideas! He'd live in fishfingers, mash (with soya milk) and beans given the chance!

Any suggestions for meals that I can batch cook and freeze?

Spag Bol , meat balls , home made chicken kievs ( made with dairy free marge garlic butter) , sausage and mash, chilli con Carne, any home made soup, tuna pasta salad ( Heinz mayo has no cream
Powder like hellmans) cottage pie ( milk alternative in the mash)

Tuna and salmon fish cakes, chicken burgers ( just send in with a roll and mash and peas) chicken korma ( just a simple one with coconut milk korma paste and chicken stock)

Sweet potato and butternut squash makes a great mash that doesn't need milk to soften and can be frozen.

You can make rice pudding with coconut milk - very thai!

Make a ratatouille, freezes really well, then send with sausage/chicken whatever on the side.
