Ds has recently been diagnosed with allergic colitis. Cows milk protiens causes awful ulcers in his colon (surgeon showed us the photos - I cried!). They tested him for coeliacs and I rang for the results yesterday. I was told he doesn't have coeliacs, but they've made us an urgent appointment to see the consultant. The results have thrown up something else, but I have no idea what, and am worried 
I digress. I'm struggling for meals to send to the childminders for him. He eats things like chicken sticks/fish fingers, etc, but I really want more variety for him, and ideally something I can batch cook and freeze. I have to eat at work - It's part of my job, so I don't cook that often at home. I've done things like chicken casseroles and dumpling, and sausage and pork stews, but am running out of ideas! He'd live in fishfingers, mash (with soya milk) and beans given the chance!
Any suggestions for meals that I can batch cook and freeze?
