can you make rice pudding with rice milk??

Hi

My 2yr old DD is severely intolerant to dairy, soya & oats.

I would like to make a rice pudding that me her her 5yr old brother can eat (so using her neocate is out of the question!!)

Has anyone tried it??

Also is it possible to make a chocolate mousse with it too??

I made rice pudding (and tapioca etc.) and you need to use about 2/3 of the usual amount of milk. It seemed to go watery otherwise.

Not tried mousse, sorry.

I make rice pudding with rice milk - just the normal way, baked in the oven for hours using the quantities suggested on the side of the rice packet.

Rice milk isn't really recommended for very young children because it has high levels of arsenic, but I think it's okay to use it for making occasional puddings / weetabix etc. - just not as a main drink.

Can you freeze it??

My plan is to make a big batch then freeze it into little pudding sized portions and just take one out for DD at a time iyswim.

greenbananas - she drinks neocate for her main drink so will only use rice milk for the odd pudding etc Smile

I tried freezing it once and it went a bit gloopy and horrible - still, you could try it... I think cooked rice freezes okay (never tried that but supermarkets sell frozen cooked rice) so it ought to be possible?

Neocate rice pudding... bleugh! Neocate is way better than rice milk as main drink but rice milk is a much better idea for puddings Smile
