Anyone got any good Christmas cake recipes?

Hello, all you experienced and clued-up people...

My mum always used to make her Christmas cake at half-term and feed it with brandy every week until Christmas... I would love to follow the family tradition. Does anyone have any good Christmas cake recipes which are free of eggs, milk, nuts, bananas and citrus?

I'm tempted to use Granny's recipe but with commercial egg replacer (never tried it before) more raisins instead of mixed peel and vitalite instead of butter... anyone have any thoughts?

I use Delia's recipe, obviously calls for eggs but would imagine you can use replacement (whatever that is!! Smile), sunflower marg fine for butter; just leave out the mixed peel (lots of people hate it anyway) ditto the nuts, yes maybe add a bit of extra fruit, and there is no milk in it anyway.

Job's a good un. I take it brandy is OK? Grin

I have tried others, but find Delia best. I would suggest googling vegan fruit cakes.

Have just tested it and it works. Vegan fruit cakes- and it straight away takes you to Christmas cakes! Problem solved!

Thank you both so much for your wonderfully quick responses! I'll certainly have a look at Delia's recipe - she's a great cook and I've always found her very reliable in the past.

Does anyone have any experience of using egg replacer and vegan margarine in a cake that they want to keep for weeks and weeks?

(I'm on a v. tight budget and Christmas cake is a pricey sort of thing to get wrong) Smile

If it helps, I've made Delia's cake with only a couple of weeks to go and it was still delicious. You don't need to keep it for weeks and weeks.

No never tried egg replacement or marg but cannot imagine marg will cause any problems, it keeps for ages anyway (in fridge I mean, but anyway no more degradable than butter IYSWIM).

Egg replacement I don't know, but agree there is no desperate need to make it weeks ahead. A fortnight or so is fine I reckon.

Hello everyone
I'm need to make a Christmas cake that is totally nut free (no marzipan or nuts).
Anyone know any different types of cake that keep a long time - something different from the usual fruit/nut cakes?

This is my new favourite baking website. There is a vegan christmas cake on it. Anything like peel or nuts you could substitute with more fruit.
