Cooking with alcohol

I regularly cook for someone who has just been diagnosed with cirrhosis & told to abstain from alcohol. Not an alcoholic, but a heavy (former) drinker.
A lot of my favourite recipes include wine/beer/cider etc.

Google does not give a definitive answer as to whether alcohol burns off during cooking.
What do MNers think? If there is a residue, could it be harmful?
