What is meant by the final adoption hearing. As far as we are aware there hasn’t been another hearing?

The one where the adoption is finally legal?

As opposed to Care Orders, Placement Orders etc?

Or any court sessions where adoption is argued against?

Sometimes there is whats called a Directions hearing at which the judge will hear about any issues, eg birth parents contesting. Sometimes there may be more than one directions hearing. So that when you get to the final hearing the judge is satisfied that there are no issues and they can just grant the adoption order.
If you are going straight to final hearing that should mean there are no outstanding issues to be addressed before the order can be granted.
