Vegan cake

I'm hosting my family for afternoon tea and cake tomorrow so I’ve been baking this morning, but just remembered my nephew’s girlfriend is Vegan and she won’t be able to eat anything that I’ve made.
Can anyone recommend a very quick and easy vegan bake, or which supermarket has the best range of vegan baked goods so I can buy something?
My only thought is some kind of flapjack made with dairy free margarine, but that sounds a bit joyless for a celebration!

Works every time and tastes amazing, people don't tend to realise it's vegan...

Most major supermarkets will stock a smallish vegan cake. Bosh! Is a good one. The chocolate one is popular with the non vegans in our house too. They also do a lemon one.

I made this as one of the cakes for a vegan wedding and it went down very well.

THE BEST VEGAN CHOCOLATE CAKE

300ml vegan milk
1 tablespoon lemon juice (or apple cider vinegar or white vinegar)
150g vegan butter
3 tablespoon golden syrup / corn syrup / agave/ maple syrup (use your favourite liquid sweetener (maple will make a slightly less sweet cake))
1 teaspoon instant coffee granules (OPTIONAL)
275g plain flour
175g sugar
4 tablespoons cocoa powder
3 teaspoons baking powder
1 teaspoon bicarbonate of soda

FOR THE VEGAN CHOCOLATE FROSTING (DOUBLE TO COVER THE SIDES AS WELL)
100g vegan butter room temperature
230g icing sugar
4 tablespoons unsweetened cocoa powder
2 tablespoons water

Preheat the oven to 160°C fan. Lightly grease 2 x 20cm/8inch round baking pans.
Stir the lemon juice (or vinegar) into the milk and set aside to thicken and 'curdle' slightly into buttermilk.
In a pot over a medium heat, melt the butter, syrup and coffee (if using) together. Set aside to cool slightly.
Sift the flour, cocoa, sugar, baking powder and baking soda into a large mixing bowl and whisk together.
Pour the milk and melted margarine mixture over the flour mixture and stir well until it becomes a smooth batter.

That chocolate raspberry cake looks amazing! They both look good actually - chocolate seems to be the way to go. Does Vegan milk just mean any plant based milk? I have almond milk in the fridge.

Marks has a vegan plant kitchen victoria sponge. Also amazing cookies in the bakery in blue bags if you can get them

I made this vegan biscoff sheet cake yesterday. I used soya milk as my plant milk and lots of biscoff spread (you poke holes and pipe biscoff into them). Biscoff biscuits and spreads are vegan anyway. The frosting has plant based philadelphia in it

Some cake recipes here: https://parsleysoup.co.uk/vegan-recipes/
I've done the lemon one a few times (but add more lemon juice if your lemons aren't that strong): https://parsleysoup.co.uk/vegan-recipes/lemon-cake/
The whole site is good on straightforward recipes that don't require fancy ingredients

Sainsbury's do a chocolate cake which is a bit sweet and a lemon one with a curd filling which is nice.
M&S do a Victoria sponge
Lots of supermarkets stock Oggs cupcakes and little iced fairy cakes.

PTSDpanic · 31/10/2026 18:58

I use this vegan fairy cake recipe. It makes about 16.

225g self raising flour
175g caster sugar
2 tsp baking powder
225ml water
6 tbsp oil (coconut, almond, walnut, vegetable, whatever works with your chosen flavours)
1 tsp vanilla essence (or almond, coconut, orange, lemon)

I like it because it doesn’t use any special ingredients, it’s easy to scale up or down and it’s quick and easy- you just chuck everything in one bowl, mix, bake at 180C for 15 minutes.

The great thing about it is you can scale it down to make 2 or 3 different flavours in one go so there is lots of choice eg swap out some flour for cocoa powder (10g cocoa + 90g flour to replace 100g of flour), throw in some vegan chocolate chips; swap the water for cold coffee; swap the water for orange (or other fruit) juice; use different toppings eg lemon drizzle (add lemon zest to the cake mix), raspberry jam and coconut, orange icing on chocolate cake, vegan crumble topping on coffee cake with a drizzle of cinnamon icing, caramelised chopped nuts (add before baking) with cinnamon or rose water drizzle on vanilla, almond or coffee cake, pineapple or orange upside down cake (kirsch soaked cherries with chocolate sponge are fantastic), swirl in jam to make a marble cake, vegan buttercream icing… the combinations are endless.

If you do make different types in one batch, you need to get them in the oven within 15 mins though or you will get big air bubbles in the cake, which look a bit ugly.

Yeah whatever plant based milk you've got. Sometimes I cheat and use vegan yoghurt mixed with water, if I don't have an open milk. Works fine.
