Cake recipe to use up curd?

I have some passionfruit curd that needs using. What would be good, maybe just a Victoria sponge with cream? I don't bake much but do like a nice cake. I hate frosting or butter cream though, too sweet. Any ideas?

A Victoria sponge is just what I thought too. Sounds delicious, I also am not a fan of buttercream.
A swiss roll would be similarly good.

Yes maybe I'll just keep it simple!

Lovely. Or a lemon drizzle that you could sandwich with the curd.

Is it the Aldi one? I love their blackcurrant curd! I’ve been eating it in Greek yoghurt with meringue

Plain sponge base, top with curd then meringue?

Pavlova are lush with curd

It's an artisan one from Ireland, a gift last Christmas that I haven't used yet

Make a plain sponge cake. Put the curd in the middle. Dust with icing sugar if you want bit more sweetness.

Muffins with the curd in the middle 🥰

I recently made a lemon drizzle “Victoria sponge” with lemon curd in the middle. It was delicious.

I had a wonderful apricot and passion fruit curd Victoria sandwich type cake but I don’t have the recipe, sorry. It was memorable, though. Might be worth looking it up.

Darkines · 24/10/2026 15:24

I whipped it into cream on a pavlova, and then drizzled some fresh passion fruit all over.
Lush as Stacey would say.

Delicious on pancakes too.

Yum, I beat half a jar of, usually lemon, curd into a sponge mix. Put the mix into a loaf tin and then drop spoonfuls of the rest of the jar on top of the mix. Cook as normal. During cooking it sinks through the cake and makes little curdy puddles of loveliness so you get a sort of jammy lemon drizzle cake

gullgal · 24/10/2026 22:32

Well I just made a standard Victoria sponge and used loads of curd and fresh cream and it was fabulous

This sounds fabulous. I think I may get more curd this Christmas so I might try this then
