What’s for dinner?

Dh is using up leftovers, ds is having salmon and I’m fending for myself. I’ll have chicken breast with something but I can’t think what. Lacking in inspiration (tbh it’s mostly lacking in motivation to go to the supermarket and get anything specific in so hoping to use what we have) and I’m also going for a low carb dinner so it will be some kind of chicken and vegetables…
what’s on the menu for you tonight?

It is a bit of a hodge-podge dinner our end.

Between 2 adults and a toddler I have 1.5 portions of leftover cooked pork, 1 salmon fillet and a variety of veg.

Hake with lemon vegetable couscous

Greenfingers37 · 28/09/2026 17:19

Chicken tagine with whole grain rice from the Fast 800 cookbook. High protein, low carb-delicious 😋

TheChosenTwo · 28/09/2026 17:35

Think I’m going to spice up the chicken, griddle it and have it with some Cavalo Nero and tenderstem broccoli.

@DeedlessIndeed mondays are often a hodgepodge night here too, using up leftovers and odds and sods from the fridge!

I'm having pasta with a jar of chickpeas and homemade tomato sauce. Something green on the side - maybe broccoli or asparagus. Followed by strawberries, mango and yoghurt.

The dog isn't feeling well and had sweet potato, rice and poached chicken.

Tarkan · 28/09/2026 17:48

No idea yet. We had macaroni cheese last night and I had pasta al burro for lunch so preferably something that isn’t pasta or cheese-based tonight. 🤣

TheeNotoriousPIG · 28/09/2026 17:49

Coq au vin, either mashed potatoes or chips, followed up by sticky toffee pudding. Thank goodness for batch cooking at the weekend!

We had roast chicken yesterday so using up leftovers of that. I also had a giant cucumber from the green house and peeled prawns, so its a bit of a mix up of salads for dinner.

Left overs from dinner yesterday
mash , gammon , peas and carrots
have done some yorkie pudding and broccoli to pad it out a bit and some fresh gravy

muddyford · 28/09/2026 17:57

Chicken thighs, spuds, carrots, cauliflower and runner beans plus gravy. I've done enough potatoes and carrots to make a salad tomorrow. I have also made a huge vat of Bolognese sauce, enough for one night on Wednesday plus two in the deep freeze!

BeardySchnauzer · 28/09/2026 17:57

Mixed bean quesadilla with side salad. Dd will have a side of chips

Just like a scooping up affair with the bread? This sounds like something I could get on board with!
