What can I cook (quick, easy, healthy)

Off to dds wedding Friday morning

on Thursday evening we all fancied going up the local pub but both me & my mother need to fake tan (I have to do hers)

so there will be 5 people at home, some in dressing gowns

what can I make that won’t bloat me for the weekend and that’s fairly quick
(this weeks meals are already - curry, chilli, dirty mince)

TIA

Stir fry?

I love stir fry but find it goes mushy if it’s for more than 2 of us!
I do

Prawns and orzo? Very quick, delicious and not too heavy.

What is dirty mince?

Can you make something tomorrow and freeze, then you just need to re heat on the day? Lasagne, shepherds pie, fish pie etc then all you need is a fresh side salad.

Chicken fajitas, throw in whatever veg / cheese etc you fancy

Also curious what dirty mince is... Heard of dirty rice and dirty cabbage but the mince is usually the dirty part.

Anyway I'd probably do a chicken tray bake of some kind, I like a Greek style one or a Nandos style one, could also serve garlic bread, coleslaw, corn etc for those that want it. It does take about an hour to cook but can mostly be left in the oven while you get on with other things.

For 5 of you, the night before a celebration, I’d go to M&S and get buffet snacks, good bread, cheese, salad and fruit.

I'd do something like this that can be done in the oven. Double up the quantities and then put it out for people to help themselves when they can. Add some salad and bread.

Alternatively I'd go with Ibiza's suggestion of M&S salad, cold meats, cheese, bread and fruit.

Salmon traybake recipe

This delicious baked salmon dinner takes less than an hour from start to finish and as it's a traybake most of that is letting the oven work its magic.
